Hot
and Sour Shrimp Soup
Yields 1 Quart

oz shrimp in shells
- 2.00
tbsp. sesame oil
- 3.00
cups water
- 1.00
oz Chicken base
- 2.00
tbsp. sweet and sour sauce
- 2.00
cloves garlic, minced
- 1.00
tbsp. ginger, minced
- 3.00
shallots, thinly sliced
- 1/2
cup straw mushrooms
-
2.00 tbsp. rice vinegar
- 1/4
cup lime juice
- 2.00
tbsp. cilantro, whole leaves, rinsed
- 1.00
tsp. Thai chili pepper, minced

1. Shell, devein
and clean shrimp; clean and reserve shells. Place shells in a
large pot with sesame oil.
2. Cook shells for 3 minutes until the
change color; add water and simmer for 15 minutes. Remove shells;
reserve water.
3. Add chicken base to water, sweet and
sour sauce, garlic, ginger, shallots, and mushrooms. Adjust taste
with additional water, if needed. Gently simmer 5-10 minutes.
4. Add shrimp and cook to tender. Finish
soup when serving with remaining ingredients.
